About the ‘Accessible Food Gardens’ Lab

The Wroclaw FoodSHIFT Accelerator Lab will increase the accessibility of food gardens to different social and aging groups by creating linkages between sustainable local food producers and consumers, education and engagement of stakeholders. It will create a model for establishing new social gardens with training and material support for an urban gardener.

The Lab aims to engage young generations in urban farming by providing education and capacity building relating to permaculture, plant based nutrition, zero-waste, importance of pollinators and circular economy solutions.

Their aim is to create and establish innovative approaches to establishing and managing community gardens to be replicated and applied in other cities.

About the ‘City Agro-Park’ Lab

The Ostend FoodSHIFT Accelerator Lab has developed a food strategy for the city of Ostend, in which the newly developed agricultural park Gardens of Stene acts as the engine to stimulate the local food dynamics and raising awareness on ‘local food and healthy diet (see more on this page).

The city of Ostend promotes local production through concrete actions; fight food waste starting with there own central kitchen; facilitate a shift towards a more plant-based diet; work with the restaurants and catering sector on short food supply chains.

The Lab will also work to combat poverty supporting vulnerable societal groups in acquiring a more healthy diet and organizing more efficient redistribution of food surplus through the Foodsavers.

Take a look to the Ostend Lab’s work in the 2 videos on this page!

What’s next?

Ostend Lab has a lot going on, their plan is full of activities, some of them are the following (but there is much more!):

  • New initiatives develop in the Gardens of Stene laking it more and more lively. Most recently a new Food forest will be established by our innovator Buitengoed (provide link to Buitengoed).
  • The city’s central kitchen will further make the shift towards more plant-based dishes on the menu and is exploring possibilities for procurement of more organic and sustainable food options.
  • Innovator Tourism Oostende works closely with restaurants and chef’s to improve to vegetarian and vegan experience in Oostende. The third veggie challenge in March 2023 is a next perfect moment to put the restaurants in the spotlight. Also cooking workshop will be part of the challenge, focusing on sport & plant based food in 2023.
  • Citizens who showed interest to be involved in the food strategy of Ostend or who proposed a concrete action will be advised on how they can progress with there idea and make a change in the food system
  • Food bazars and restaurants will be introduced to local products and upscaling and optimizing the local foodchain will be discussed during an interactive workshop

The food system in Copenhagen is evolving towards greater inclusion and diversity – both in terms of actors, products and connections. The Greater Copenhagen Lab (GCPH Lab) consists of the University of Copenhagen, Lejre Municipality and the SMEs Circular Food Technology / Agrain and Changing Food.

The GCPH Lab will strengthen the regional food system by creating awareness, recognition and learning about food system transition based on selected innovation actions. The selected innovation themes are distinguished by the fact that they 1) could be further matured and upscaled and 2) are key elements in a sustainable transformation of the food system. We encourage all food system stakeholders to collaborate with us on these themes.

  • Urban-rural cooperation towards sustainable food systems
  • Citizen engagement platforms
  • Upcycled food
  • Empowerment of local society

About ‘Food Hub’ Lab

The Berlin FoodSHIFT Accelerator Lab will establish an Urban Food Hub prototype (LebensMittelPunkt) in the Baumhaus as a lighthouse project for the food system transition in the Berlin-Brandenburg region.

With the Food Hub, we are developing a concept for providing space for multiple functions, including direct trade of regional food, sharing, preparation, consumption, and co-learning/experimentation. Simultaneously, the Food Hub aims at enabling inclusive community building and empowerment.

Based on this prototype, we seek to establish further Food Hubs in all districts of Berlin at a later stage of the project.

About the ‘Regional Lunch for All’ Lab

Avignon FoodSHIFT Accelerator Lab is exploring the capacity of public procurement to be a driver to envision a city food strategy.

This Lab aims to increase the quality of meals served in school canteens and elderly catering, as well as, wishing to educate children on food (dietary choices, local and seasonal production) through their school canteen experience.

Focus areas:

About the ‘Open School’ Lab

The Athens FoodSHIFT Accelerator Lab focuses on social innovation by engaging schools in (re-) connecting young people with land and nature as well as using summer courses to promote healthy eating and plant based foods.

It uses community empowerment providing hands-on learning opportunities for the food-smart citizens of tomorrow and strengthens the link between urban and agricultural communities by developing the dialogue between schools and food actor networks. It will also work on solutions for using leftovers in school canteens and kitchens.
